Two of the greatest things in my life began as a joke between my wife Abbey and I in 2018.
The first was a series of corgi posts on Instagram, the kind that make you say you want a corgi named Winston. More than a year later, we drove 10 hours to her aunt’s farm and found the most precious, goodest boi.
The second was a notion that, as we enjoyed our weekend crepes I’d just made, I should quit my job and start a crepe enterprise. Well, in 2022 I finally made good on the gag, developing a strong sense of how much work it takes to bring fresh, good food to people while I stood over a griddle on hot summer days. By April 2023 we were mobile, bringing food to a whole bunch of breweries, fundraisers, weddings, parking lots, alleys, and driveways in our big blue truck while we were known as Crepes de Soissons. But, honestly, not a whole lot of people can pronounce Soissons and corgis are way cuter anyways. So there.
And of course you know I gotta get a lil sappy. Thank you for taking the time to get to know us. It truly is a pleasure to cook for everyone I interact with, and I hope that you are able to enjoy something from us very soon!
And a shoutout for my lady because none of this would be possible without the love and support of my beautiful, talented, brilliant and powerful musk-ox of a wife.
We’re also super not famous but we have been in Westword and on KWGN Food Truck Friday so I guess we’re kinda cool?
